A Perfect Summer Meal

Summer is here, and what better way to enjoy the sunny days than with a refreshing and delicious salad? One of the most popular salads that come to mind is the Niçoise salad. This French salad is known for its vibrant colours and fresh ingredients, making it the perfect summer meal.

In this recipe, we're adding tuna and hard-boiled eggs to the classic Niçoise salad, making it even more protein-packed and filling. The combination of tuna, eggs, mini chopped tomatoes, and wild rocket creates a satisfying texture and flavour, while the homemade lemon dressing adds a tangy kick.

Not only is this salad tasty, but it's also packed with several essential vitamins and minerals. The wild rocket provides a good source of vitamin A and C, while the tuna and eggs are rich in protein and healthy fats. Plus, the garlic and extra virgin olive oil in the lemon dressing add some extra health benefits.

Ingredients:

  • 2 cans of tuna
  • 4 hard-boiled eggs
  • 1 cup mini chopped tomatoes
  • 2 cups wild rocket
  • 1/2 cup extra virgin olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon Dijon mustard
  • Juice of 1 lemon

Instructions:

  1. Start by making the lemon dressing. In a small bowl, whisk together the extra virgin olive oil, minced garlic, Dijon mustard, and lemon juice. Set aside.
  2. Next, drain the canned tuna and set aside.
  3. Peel and chop the hard-boiled eggs into quarters.
  4. Wash the wild rocket and set aside.
  5. Chop the mini tomatoes into small pieces.
  6. In a large bowl, combine the wild rocket, mini tomatoes, and tuna. Toss together.
  7. Drizzle the lemon dressing over the salad and toss again.
  8. Arrange the hard-boiled eggs on top of the salad.
